Healthy Spinach Rice as a side dish(fromGreece)

You need: spring onions(3-4)
          spinach( 2 handfuls for 2 people)
          dill
          a carrot(for colour and vitamins)
          olive oil(2 tablespoons)
          rice
          salt and pepper

You start off by chopping the onions,spinach,dill and carrot and place them in a pan WITHOUT any olive or water.Leave them until the water from the spinach is evaporated and add the olive oil. Stir for a couple of minutes and add the rice,salt and pepper. Normally to make rice you need 1:2 proportion of rice and water but in this case we want the rice to be overcooked so we use half a glass of water in addition and we cook it for more than 15 minutes.
Tastes yummy and might prove a healthy food for children
