Erin's enchilada's

Ingredients:
1- pkg. of Corn tortillas-white or yellow corn
1- Vegetable oil
2- bags of shredded cheese-best with monterey jack and colby mix
1-2 cans Red or Green enchilada sauce-your preference- I use both and half them
1- bunch scallions(green onions)
1- head of lettece
1-Sour Cream-optional
Directions:Preheat oven to 500 degrees
Heat oil in large pan and get out a plate to set tortillas on-
When heated- put 1 shell at a time in heated oil and cook about 30-45 seconds each- remove and set aside on plate. Cook as many as you wish. When finished cooking shells,get out a deep cake dish and begin rolling enchiladas in dish while filling them with cheese- Please use caution because they are still hot-After they are rolled, add enchilada sauce to top of enchiladas and garnish with more cheese and green onion. Place in oven for 5-10 minutes depending on how fast your oven cooks keeping and eye on them and remove when the cheese is fully melted. Serve with sour cream and lettece. Enjoy :)
